Baking traditional batter cakes as well as cheesecakes can be a hassle, especially when the cake crumbles while you are trying to remove it from a pan. Focus Foodservice created its 12" Aluminum Springform Pan (900412) with a removable bottom to help alleviate this problem. The latch on the side of the pan securely seals the bottom into place to eliminate pesky leaks. It also has feathered rims on the interior connection for the latch so the pan is easier to clean. This springform pan is constructed out of 3003 H14 aluminum, which is great for distributing heat. Focus Foodservice recommends washing the pan only by hand.
